Gluten Free Pistachio Pudding White Chocolate Cookies
13 minute cook time.
Ingredients
1⅔ cups all purpose GF flour
1 box instant pistachio pudding mix
1 tsp baking soda
½ tsp salt
Green food coloring, optional
¼ cup light brown sugar
½ cup sugar
¾ cup unsalted butter, softened
2 tsp organic vanilla extract
2 eggs, room temperature
1 1/2 cup white chocolate chips
½ cup chopped pistachios
Instructions
Mix together sugars, butter, egg and vanilla until well blended
Stir in dry ingredients, chocolate chips and pistachios, mix well
A few drops of green food coloring if you’re desiring a brighter green cookie. I added three small drops and quickly mix in. I suggest waiting until you have all the ingredients well mixed so the coloring doesn’t get absorbed by the dy ingredients only.
Preheat oven to 325F (make sure you watch the cookies the first time you make them, my oven is a tad tempermental)
Lightly grease cookie sheets with canola oil
Scoop out rounded tablespoons of cookie dough and place on prepared cookie sheet.
Bake for 13 minutes, anything over and they might not come out as chewy and soft.
Let cookies cool and then enjoy!
