My husband refers to our meatless fridays as “Fish Fridays”, but I don’t always do fish. I like to take Friday’s to get creative in the kitchen. And I think that this recipe for Citrus Shrimp Tostadas is both simple and creative. Just the way I like it!
I came up with this recipe idea from one of C’s good friends, Chino. Chino has a signature dish he calls “Mexican Pizza” and while the dish is not really a pizza at all, we eat them anyway because they are DELICIOUS! A couple of the flavors from his Mexican Pizza that always stand out to me are the mango, shrimp and pesto.
As strange as it may sound, those three ingredients are an explosion of tastiness. So from that flavor profile I adapted my own recipe subbing out the mango for grapefruit. I also bake my corn tortillas instead of frying them to keep them on the lighter side. I try and save calories anywhere I can.
Once I have all the ingredients chopped and the corn tortillas baked, I assemble the ingredients and make a tostada. The flavors are all so light, fresh and filling. I hope you try out the recipe and enjoy it for yourself! It’s fast, healthy, gluten-free and most important of all, delicious.
Recipe Ingredients:
1/2 pound uncooked shrimp
1 large avocado
8 corn tortillas
1 large ruby grapefruit
Pesto
1 can of black beans
Colby Jack Cheese
2 Roma Tomatoes
3 Cups of Lettuce
Recipe Instructions:
Cook shrimp in saute pan with 1 teaspoon of butter, salt and pepper and minced garlic for 4-5 minutes then set aside. Chop tomatoes, avocado, grapefruit, lettuce and set aside Grate Cheese, set aside. Spray corn tortillas with olive oil and bake in oven for 15 minutes at 350 degrees until they are firm like they would be from frying them in oil, then let cool. Warm black beans in sauce pan for 10 min, add garlic salt. Assemble Tostadas and eat. This recipe is simply delicious and the perfect weeknight meal that can be cooked and on your plate in less than 30 minutes.Enjoy!
