One of my favorite fall dishes is Chili. It was always a favorite fall meal my mom would make. It’s a nice hearty dish that warms you up and is always so satisfying. My mom would make this on Halloween every year for a long time and this past Halloween, I started that tradition up and when I did, I was super impressed with myself for making such a good chili!
So I had to share the recipe. It’s not rocket science, but there are so many ways to make a chili and this way is my favorite. The secret I’ve learned after all these years of chili eating is the spices. I think that some recipes for chili are pretty bland. Considering that there is a variety of beans in chili, you need to make sure that you add enough to give flavor.
Another reason I love chili, is because it’s such a fast meal!

The Best Fall Chili
45 minutes. 15 minutes to cook whatever meat you use, then 30 minutes simmer on medium to low heat.
Ingredients
2 cans of Organic Kidney Beans
2 cans of Organic Black Beans
2 Cans of Organic Chili beans ( I like the added spices) usually they are a mixture of breans
1 pound grass fed Organic Beef
1 large chopped onion
3 cloves of garlic chopped
2 cans of chopped tomatoes
2 tbs of kosher salt
2tbs of ground black pepper
1tbs of cumin
1-2 tbs of chili pepper, depending on how much spice you like
1/2 Organic Ketchup
Instructions
Chop white onion and garlic and place in saute pan on medium heat- add a little coconut oil to get started
add ground beef and cook until brown.
In large pot, place all beans. I drain all the beans, except for the ones that are labeled Chili beans.
Add in canned tomatoes with the juice.
Add in all the spices to the beans and stir.
Then stir in the ground beef mixture.
Let simmer on stove on a low-medium heat with a lid for 30 minutes.
I check on the chili every now and then with the lid on to make sure it doesn’t get too hot, you want it to simmer slowly.
Right when you are about to serve, add in the ketchup and stir, then take off the heat.
Then garnish with whatever toppings you like.
I like sour cream, chives, cheddar cheese and chopped white onion.
Notes
You of course don’t have to use organic or ground beef. You can certainly make this chili with ground turkey, chicken or even tofu.
